New Years Hoppin' Johns 🥣🐖🥬

 


You need to start assembling your ingredients so you are ready for New Years Eve. I always made them with black eyed peas, but red beans are used too.  I think either (or both) would work just fine.  Ham hocks, bacon, and other smoked pig parts are definitely needed.  Rice can be cooked into it and served on the side. I like collards in my too, along with green onions as a garnish. You can use herbs and spices to taste.

The key is having the rice not turn into mush with the beans. You cook the beans to be tender, but not refried. The beans and rice should be distinct. The final product should be more like paella.
