I have made Sassafras tea and root beer. The root beer just requires a bit of fermentation (but not too much). Nothing wrong with some hard root beer (depending what you are trying to do), but I find if you let it go too far it doesn't taste as good (it will get dry). Like anything, it is a matter of taste, whether this is for adults or kids, and what you are trying to acomplish. Experiment!
Warning that sassafras may be a carcinogen and does interfere with some drugs. It also may have some anti-cancer benefits. I believe that risk has been shown to be very low--but FYI.
