Jacques Pépin French Omelette



This is the classic French omelette.  How can you go wrong with eggs, butter, and fresh herbs?

A lot of people claim you should never season eggs before cooking. Lots of people also says eggs should be cooked at low heat. Ok. That is generally not bad advice. 

Jacques Pépin does the opposite on both counts. It still works (well I assume it works because he says so and it is Pépin and when I cook an omelette I do the same). Note that Pépin is actively working the pan, not over cooking the eggs, and the dish is timed perfectly.  That is the key with eggs, less is always more when it comes to cooking time. And making omelettes, while relatively simple, can be messed up really easily if you are not on it and paying attention.
