Celebrate National Shrimp Day

There are a lot of types of shrimp around the world...
A world full of shrimp and so little time to try them all.
Celebrate National Shrimp Day!  I greatly prefer wild shrimp to cultivated.  And here is a classic New Jersey recipe (which is a bit tongue in cheek)!  The most common found in North America fish markets are white (both wild and farmed), brown and tiger, and sometimes fresh water (almost always farmed).  The wild ones will be mostly from the Gulf of Mexico, but there is still shrimping in the Carolinas and Georgia.  Also small Oregon pink shrimp meat (which is great in salads and is always wild).  And if you get the chance, Pacific Northwest spot prawns (found from Washington up to Alaska) are incredible.

I trust the wild product more and I want to help local fisherman as opposed to foreign aquaculture operations that have some questionable practices (both for the environment and in the quality of product they produce).  It is a bit more expensive, but worth it.
