There is really no single way to do latkes. The Food Network link shows some varieties. Basically any grated root vegetable, egg, and fried in oil makes a latke.  I do like mixing in things like grated parsnips, Japanese sweet potatoes, and celery root, along with potatoes (I like yellow potatoes).  I have more recipes though the latke link. I prefer savory ones with shallots and onions, but sweet ones work too.  Experimentation!
