Which turkey tastes better?


LA Times: So are those heritage turkeys worth the extra bucks? 

Cook's Illustrated suggests breaking the turkey apart to allow for uneven cooking.  That could be true for a heritage bird or a typical broad breasted white.  It is basically dismembering vs. splatchcocking.
